I made this last night: Seared Tuna with Green Onion Wasabi Sauce
Some of the people who posted reviews on the recipe suggested to use white and black sesame seeds as a crust, use wasabi paste instead of the powder, and jack up the amount of paste used in the sauce. Overall I liked the recipe. Quick, easy, tasty.
I always coat with black sesame seeds and then sear. for an easy topping, just toss together some chopped fresh tomatoes, basil, sherry vinegar and olive oil (salt and pepper of course_. add fresh garlic if you wand, even avocado.
just lump on top cold.
also, you can get good quality searable tuna at costco frozen. ive tested it toally raw and it's really good. thaw slow in water and let sit out for a little while first.
I like making a hot mustard sauce with seared tuna. I found this Roy Yamaguchi recipe:
1/4 cup Colman's mustard powder
2 tablespoons hot water
2 tablespoons unseasoned rice vinegar
1/4 cup soy sauce
To prepare the Soy-Mustard Sauce, mix the mustard powder and hot water together to form a paste. Let sit for a few minutes to allow the flavor and heat to develop. Add the vinegar and soy sauce, mix together, and strain through a fine sieve. Chill in the refrigerator.
It's nice and hot and really good with seared tuna. Yum.
