I like scallops. A lot.

Do any of ya'll grill them? I always see recipes for pan frying them, and maybe that is the best method. I'd like to make some this weekend.

Any suggestions?
 
My concern about grilling them would be getting the fire hot enough to be able to sear the scallops. Personally, I like my scallops a little raw in the middle, or at least rare.

I've never grilled them so I can't speak from experience, but you really can't go wrong by keeping it simple and pan frying. I'd also be a little worried about losing 'em between the grates.
 
I grill them quite a bit. Like the previous poster eluded to you need to make sure your fire is hot enough to sear them. If you get the big sea scallops they take about two minutes a side. Make sure you double skewer them, because they will spin out of control if they are uni-skewed. I ususally top them with a melted butter sauce.
 
Another method for grilling is to wrap sea scallops with bacon. I like to par cook the bacon strips then wrap the scallops, skewer them, brush them with olive oil, and sprinkle on a little salt and pepper. Grill for a few minutes on each side.
 
i prefer to broil them...fry some bacon only until it is soft (1/2 way cooked, place it aside)...make a sauce, 1/2 melted butter, 1/2 lemon in a small bowl....dip the scallops in the mixture, wrap the bacon around the scallop and hold it together with a tooth pick or skewer, and place the scallops on a foil covered cookie sheet or broil pan.

Broil for 3 minutes on one side, take out flip over, brush or pour remaining butter/lemon mixture over scallops and broil for another 3 minutes.....take out and enjoy...i like to add a tropical chutney sauce like mango or something to it...central market has a good jar kind.....they are excellent...

FYI, this is the exact recipe for the scallop appetizer at Mortons and it is very simple and great....
 
general that sounds damn good. I'm going to have to try that.

Until then, my favorite way (unfortunately does not include bacon) is to pan sear. Then de-glace the pan with some vermouth or white wine, add lemon juice and herbs and/or spices to your craving. Reduce to a nice light sauce for the scallops. God I love scallops. Especially diver scallops.
 
I don't have the recipe, but some of the best ones I've had were grilled on one side, then flipped into a portabello cap and grilled longer with lemon butter.
 
Dipping sauce: Dice one chipotle from a can, some garlic, and mix into some olive oil (maybe 4oz) with some sugar (maybe 2 T), a handful of fresh cilantro chopped, and lime juice (maybe a half of small lime squeezed). Also a tablespoon or 2 of fresh minced ginger. Mix and refridgerate for an hour.

Make a mixture of corn meal, corriander, s & p. Coat both sides of scallops. Saute in butter.

Serve with dipping sauce.

Pretty damn good. I am guessing on the meausurements, but is was super easy and you can play with it to get the taste you desire.
 
The weekend we had a gathering where we cooked up a ton of chicken wings on the grill. Then, some guy showed up with a bushel of oysters so we ate half of them raw and cooked the other half on the grill, both whole and on the half shell.

Then about 11pm, some guy showed up with a huge bag of scallops and some bacon. We just wrapped the scallops and put them on the grill until the bacon was done. I was afraid the scallops would be too done at that point, but they were fantastic.
 
I be in Georgia. I was just introduced to these folks and they do something cool every Friday night, but with no real plan. People just start showing up and bringing food. They cook most of the stuff on a large outdoor brick, open-pit grill.

Three of the guys recently built this big-*** smoker that I really can't describe. It is still a work in progress but it is functional. Three of us are doing a huge thing in 2 weeks. I'll post pics of the drunken carnage as we do that.

The thing that pisses me off is that I didn't stumble on to this little group earlier.
 
I am totally going to do that bacon wrapped scallops thing next weekend. I imagine I can get some decent scallops in Fort Worth at Central Market? I've bought never-frozen shrimp there before...
