I was thinking about changing up the menu this year from the normal steak & shimp, sausage, burgers and sauteed mushrooms and need some ideas.

how about a smoked pork butt for pulled pork? i did it a couple years ago with a homemade carolina mustard style sauce for a sb party and it was a hit.

you're looking for something different, so another idea might be a smoked salmon -- not steaks but a big filets. i slow smoked 2 huge filets i had brined overnight in a juice/cider/spice brine for a party last year, with 2 homemade sauces, and it was crazy good. probably not a main dish, but very different from your standard sb grub.

I want to make some Chicago-style Italian beef. I have never made it before, but I'm rooting for da Bears, so it seems like a natural choice.

We have had chili dogs, and the usual fixin's, every year for maybe 15 years; I've lost track. Lately, I have substituted Hillshire Farms 'dog sized sausages for the hot dogs. Really good.

I thought out loud we might do a brisket and use some real Texas sauce my sister sent up for Christmas, but Mrs. Idahorn2 is agin it. She wants to save the sauce.
