Sausage in Dallas

Where is the best place to buy sausage in Dallas? Kuby's?
I'm looking for tome jalapeno cheese venison sausage and don't want the grocery store stuff. Thanks

Kubys may be your best bet for vinison but I would call first. They are heavy on the german sausage. Or try Rudolph's Meat Market on Elm in Deep Ellum. The best italian sausage can be found at Jimmy's Food Store at Fitzhugh and Bryan.

Now I'm hungry.

The first time I ever ate bratwurst I was 27, a little drunk, at the Hoffbrau Haus in Munich and the things were amazing. Very lean and firm. Like eating ground pork loin and not much else. I was amazed at how little fat bratwurst had.A year later I had one at a St. Paul Saints baseball game in St. Paul, Minnesota. The thing was extremely fatty, but I figure that even though there is a huge bratwurst culture in the upper mid-west, it might just be low quality stadium food. (The thing was only $3 inside the stadium, so what more did you want?)

A year and a half after that I bought some brats from Kuby's to be grilled over at a friend's house. I was amazed at how fatty
these things were. I figured that Kuby's would be very German authentic and the brats I had had in Germany were extremely lean.

I mean I know if you are eating a brat, then you are not completely thinking of your health when you eat them, but is there a place (or a way) that you can get a brat with 5%-10% fat rather than 40%-50% fat?

Thanks.
