I have used this one for several years, it is very easy and it always comes out great. It is from Robert del Grande, of Cafe Annie fame. Make it the night before (or at least several hours before) if possible and stick it in the refrigerator for teh flavors to really combine
Recipe from Robert Del Grande, Cafe Annie, Houston.
12 ripe plum tomatoes
1 small yellow onion, coarsely chopped
6 cloves garlic
5 serrano chiles
Small bunch of cilantro
2 to 4 chipotle chiles, canned
Salt and pepper, to taste
Lime juice, to taste
Place tomatoes in roasting pan like billiard balls in a rack. Add onion, garlic, and serrano chiles. Roast at 400 degrees about 45 minutes or until tomato skins are blistered and charred. Let cool, remove pepper stems, and transfer to food processor. Add cilantro and chipotles. Process 1 minute. Add salt, pepper, and juice.
This recipe is very easy, and makes a great salsa.
4-5 big tomatoes. 3-4 serranos per tomatoe
remove core from top of tomatoe and cut tops off of serranos
Put te tomatoes in a pot, then throw in the serranos.
Turn temp to 7.5 or 8 out of a 10 heat setting.
Put top on pot and walk away for 30min. Have a beer or two.
Come back and remove top, becareful not to burn yourself from the steam. Use a wooden spoon and mix the pot up. MAKE SURE YOU SCRAPE UP ALL THE CHARRED BITS, this imparts the best flavor on the salsa. Put top back on pot and walk away for another 30 min. Have another beer or three.
Come back and repeat above step. Turn down heat to medium, add salt to taste. I like Kosher Salt, let salsa simmer for about 5 min. Remove from heat put in bowl and serve with chips.
