Get some salmon rub from Central Market.
They have some nice index cards that have salmon recipes, one of the best ones is real simple.
It uses the rub, you basically sear it in a cast iron pan.
Serve with some nice field greens, some couscous, and a nice pinot grigio.
My big impressive dinner when I was in college was to take a piece of salmon, put a light coating of mayonnaise on the top, and dip it in breadcrumbs. Bake for 10-12 minutes and serve. The ladies were most impressed.
