Salad Dressing

Anyone have any favorite low-calorie salad dressings?? Either storebought or homemade, doesn't matter. Randall's has a pretty good line of fat free dressings but I'm getting burned out on them. What are your favorites?

I use oil and red wine vinegar, it's low carb and the EVOO is full of good stuff, none of this "low-calorie" chemical filled high carb manufactured crap. I garlic infuse the EVOO to make it more tastier.

Since it's tasty, I don't have to use a ton of it like I do when I use that low calorie crap.

A little high quality garlic infused cold pressed EVOO and high quality red wine vinegar a little freshly ground black pepper a little kosher or sea salt maybe a sprinkle of italian herbs and I'm set.

Caesar Tofu Salad Dressing

8 cloves roasted garlic, pan seared brown in olive oil works too
2 anchovy fillets, optional
2 Nicoise olives, pitted
2 tablespoons mustard, whole grain is best
16 ounces soft tofu
2 lemons, juiced
1 cup extra virgin olive oil
Salt and black pepper, to taste

In a food processor, pure the garlic, anchovies, olives and mustard. Add the tofu and lemon juice. With machine running, drizzle in the olive oil and season.

Does anybody know of a really solid store-bought ranch? I know it sounds weird, but I'm super-picky about ranch. I love the ranch at salad bars but hate hidden valley, kraft and the like. They seriously just taste ************* awful to me.

Also, agree about red wine vinaigrette. It's badass, especially in a broccoli salad.

The best Ranch you can get at the store (in my experience) is the one you get in a packet and then you get the container and make it yourself at home. Nothing pre-made in the bottle tastes right IMO. If only Jason's Deli bottled their ranch...

I like Ken's Greek with feta
inexpensive--not super low calorie, but low card
makes me think of olive garden

I've been eating a weird concoction -- store bought fresh pico, a can of tuna, olive oil and balsamic vinegar-- the balsamic mixes with the tomatos and onion-- really nice flavor

fast, easy, healthy lunch

You are definitely not alone. I don't think the stuff in bottles at the store even resembles the ranch dressing at salad bars. And I have no idea why. Thundercloud makes a really good ranch dressing, maybe they'd tell you how they do it. About the mix-it-yourself dressing, I feel like the little kit thing is Hidden Valley brand. It's the one that makes their own bottle for the dressing and you make it in the bottle. It does involve mayo, which grosses me out as well. I can just remember doing this every sunday at my friend's grandmother's house and I didn't participate in the mayonnaise mixing because I'd rather not think about my Ranch containing mayo, even though I am fully aware that it does.

I'm usually either a Ranch or Ceasar person. Once I discovered how high calorie Ceasar can be I tried avoiding it but Kens has a really good low cal one. It's a little bit spicy and really good.

I don't know how low cal or good for you it is, but I use Good Seasons Zesty Italian and make it myself. More vinegar (taragon flavored), less oil and add a dolop of brown or dijon mustard.
