Red beans and rice suggestions please

oh my god.

find a real red beans and rice recipe. nothing better than real red beans and rice. popeye's is not. i am so mad right now that i clicked on that link.
 
my folks live in new orleans. here's our recipe:

put 2 lbs soaked, drained beans in large pot with:

2 cups chopped onion
1/2 cup chopped scallion tops (green part)
3/4 cup chopped bell pepper
1 1/2 tablespoons minced garlic
2 tablespoons minced parsley
1/2 lb chopped/cubed ham
3/4 lb chopped/cubed salt pork
1 hambone, or 2 smoked hocks
1/2 teaspoon black pepper
1/4 teaspoon cayenne
1/4 teaspoon crushed red pepper flakes
2 bay leaves, broken up
1/2 teaspoon dried thyme
1/4 teaspoon dried basil
2-3 quarts cold water

bring to boil then lower heat and simmer 3 hours, stirring every half hour or so to prevent scorching, add water as needed until you get the gravy the way you like it, adding tabasco and cayenne to suit your taste

serve with sides of smoked sausage, white rice and french bread
 
gak's looks good...i use the one from uglesich's restaurant (which used to be near the garden district of NO, but has closed...however, i have heard rumors that the son, John, is considering reopening). i'll post it when i get home. it's time consuming, but really good, and you can freeze it and save it for later.
 
oh and with the chopped/cubed ham in my recipe, i would use baked or plain ham and stay away from smoked ham, especially if you are using hocks in place of a hambone, it would make it too smokey and salty, just a tip

say what you want but the zatarain's mixes are pretty damn good...and I've had tons of red beans and rice at all kinds of places in New Orleans
