Recommend a good summer vegetable cookbook?

Looking for a good cookbook with healthy recipes for serving/ cooking/ grilling fresh garden vegetables- corn, zucchini, beans, carrots, asparagus, tomatoes, lettuce, cabbage etc. to give as a gift. I'm thinking something with good salad ideas, ways to use outdoor grill, salsas- to take advantage of fresh food.

Anyone with any good recs to start/ places to look? Thx.
 
Grilling veggies can be over complicated in books. Keep it simple.

a foil bag with, veggies you like, onions sliced or chopped, garlic whole or crushed, olive oil, season salt and pepper and grill for 30-45 min on medium heat. You can open and quickly check after about 30 minutes, but be careful of the steam

or

a veggie grilling tray, veggies you like, onions sliced not chopped, garlic whole or crushed, olive oil, season salt and pepper cook on medium heat until tender

For asparagus, just use the tray and oil, crushed garlic, season salt and pepper cooking on medium heat until tender. You could try not to use the tray, but it's sometimes difficult to turn without having a few fall into the coals

for corn on the cob pull the silk off the top, soak in water for 5-10 minutes and grill on medium heat until either the kernels are warm or soft depending on preference.

Your biggest enemy with grilling veggies is having the coals too hot. For medium heat you should be able to hold your hand directly over the cooking surface for about three to four seconds.

I suppose there could be more, but again, I like simple. I'm sure others have great book ideas.
 
Using skewers and making "rafts" out of asparagus is the way to go. Just make sure you soak the skewers (sans asparagus) before doing so.

I like making a ginger-lime-soy marinade (with plenty of red pepper flakes) for veggies (zucchini, portabellas, bell peppers, pineapple, button mushrooms, eggplant, etc). Let them marinate for an hour or so and throw them on a hot grill.

I can eat grilled red bell peppers as a meal in and of itself. So good.

For corn on the cob, cream some butter with jalapeno, garlic, lime, and salt. Rub the butter on the corn, removing the silk but leaving the husks on. Tie some twine around the ear and throw on the grill. I also like doing this with a sun-dried tomato & garlic butter.

Grilled corn on the cob is the ****.
 
For a quick marinade, toss the veggies in Italian dressing. Provides great flavor and doesn't need much time to marinate.
