My wife makes up this stuff that is great so I thought I would share.
4 chicken thighs (bone in)
1 T curry powder
1/2 t black pepper
3 c chicken stock
1 large yellow onion thinly sliced in circles
1 cup rice
1/4 c flour
1 1/2 t salt
1/4 c butter
1 cup dried cranberries
Combine flour, curry, salt, and pepper in a gallon size ziploc bag; addd chicken piecess and shake until coated. Brown chicken in hot butter. Sprinkle onion, dried cranberries and rice over chicken; add chicken stock. Reduce heat, cover and simmer 45-60 min until tender.
This thing knocks my socks off everytime she makes it. Enjoy.
