Like any game, the taste of the raccoon depends upon it's diet. It is my understanding that the raccoons that have a heavy corn and apple diet are best.

I have also learned that capturing a raccoon, feeding it milk and cereal for a couple of weeks, then killing - is listed as a best practice in the 1975 Joy of Cooking.
 
If you are smoking it, leave one paw attached. I don't know why, but that's what a guy told me they always did.

I dunno, I helped skin many of them when I was a kid and my brother trapped. They stink like ****. You cant' wash it off your hands.
 
when I was young my dad would take us to the deer lease and while they were hunting we would go to the front pasture and kill squirrels and rabbits. they would then throw them on the pit for dinner. That was some good eating!!!
