Do you have a grill? If yes, go this route. If no, resond and I'll give you my pasta go to.

Go to HEB and get a salmon filet - 1lb or less is fine. Cut it in half, marinate it in lemon juice and dijon mustard w/ some sea salt and pepper. Grill it on a hot grill for about 4 minutes each side, skin side first.

Sides:

Small red potatoes, boiled and served w/ butter, S&P to taste. Start this first as it takes some time to boil them.

Fresh green beans, uncut, steamed w/ a bit of butter.

Don't forget two bottles of wine.
 
Grilled (or I suppose you could pan fry) Pork Chops. Quick, easy and inexpensive.

Marinate in Salt + pepper + crushed garlic + Olive Oil and dry white wine. They cook in just a few minutes on each side. Dont over cook.

Serve up a summer salad; Romaine, grape tomatos, shredded carrots, cucumbers, shredded cheese and add frozen corn (thawed) + a few golden raisins. Dressing, something creamy or sweet.

Grill or steam asparagus, its in season. Put in covred dish,m add water, salt and pepper, butter and squeeze lemon. 4 minutes on high in microwave. Let sit and steam. Easy.

High Heat potatoes. Cut into slices, marinate with oliive oil, salt pepper and garlic (add jalapenos for a kick). Cook on a broiler at 450 degrees for 45 minutes. Stir every 15 minutes.

You want easy?

Sweat a clove of minced garlic in some olive oil, then toss in a can of Rotel Italian (season to taste). Simmer that while you boil some penne pasta (8 oz. or so) to al dente. Toss the pasta in the sauce and serve with a quick salad of romain lettuce/large croutons and a dressing of olive oil & lemon juice (salt & pepper to taste). Sprinkle flat-leaf parsley over pasta, grated parmesan cheese on salad and pasta, and serve with warm french bread (I make an garlic herb butter for the bread) You should be able to make that entire meal for $15 or less.
 
threesheets hit my second idea. You can jazz that up w/ some artichoke hearts, fresh tomatoes, sun dried tomatoes, etc (basically, anything you like) in the pasta - and I use angel hair.
 
JT- you can definitely do a lot to personalize the that dish. And angel hair work great (cooks even faster). I would actually puree the canned tomatoes down to tiny pieces- makes for a better sauce. And use real parmesan- not the stuff in the green can.

I normally don't use a whole lot of short cuts when I cook, but that is a great pasta meal I can make in no time (works out great on weeknights).
 
I went with the porkchops. Great suggestion, and they were awesome!

She loved them, and I was a hero because I know my way around the kitchen (or grill, as it was)
