Made this last week and it was pretty damn tasty.
1 rotisserie chicken from HEB
1 - 2 onions
1 red bell pepper
1 yellow bell pepper
4 ears corn
3 cloves garlic
2 chipotle in adobo
2 jalepenos
tablespoon cumin
salt & pepper
28 ounce can stewed tomatoes
8 ounce can tomato sauce
32 ounce of chicken stock
Saute onions and garlic until tender. At the same time roast corn and peppers. DIce up peppers and take corn off cob and add to onions. add chipotle and jalepeno. saute for a few minutes. Add tomato sauce and stewed tomatoes and chicken broth. Simmer for about 20 minutes. Shred chicken and add. Simmer as needed. Enjoy with sour cream, diced red onion and avocado. Use tortilla chips or make your own.

I made some this week and substituted 2 ancho chilies for the chipotle and added half stick of cinnamon. Haven't tried it yet but when I tasted it while simmering it was pretty good.
