There's an article floating around somewhere from a guy who went to a show and was severely disappointed that everything was pre-planned. My buddy had a friend who was a sous chef for a contestant and basically they get two or three possible secret ingredients a week ahead.
But the main issue of the guy who wrote the article was that the food they cook isn't even what the judges eat or something. Like they cook it -- then get to cook it again to give the judges food that is fresh/hot.
I say who the fucks cares. I'm tired of peole questioning the integrity of food network shows.
The process of giving a list of possible secret ingredients ahead of time is the same as it was for teh original Japanese show. The idea was to give the chefs some chance to think about what they might do in such a short time.
My dad's friend is on an upcoming battle (already taped but not aired yet). He said that they're given a list of three potential secret ingredients a few weeks in advance and are allowed to bring up to 20 items (either culinary tools or special ingredients not in the incredibly well-stocked Kitchen Stadium pantry).
It would be impossible to do the show without having first prepared a menu, but that's the way they make it look. Obviously the chefs delegate a lot of responsibility to their sous chefs, but they're the ones whose name goes on the menu, so they need to shape it to their culinary vision.
And yeah, they only prepare one plate of each food in the hour. Then they go back and finish the rest of the plating.
Still, it's incredible what they do. They really are geniuses in their field.
