Robert Rodriguez' recipe went into the oven a few minutes ago. I need some ideas for side dishes. I'm going to serve it over white rice and I'm leaning towards just some fresh melon.
 
Find one of Diana Kennedy's cookbooks and do the tamales de elote, more a less, a creamed corn and plantain tamale that is I am sure what the Mayan kings had with their pibil.
 
Is there any masa in it?

I'll look it up myself, but I'm not going to get to it for a while. I make some chorizo tamales with a roasted corn salsa dressing that are really good.

The Puerco Pibil was outstanding. It was like eating pork cotton candy.
 
Later. They are straight out of Stephen Pyles cookbook Texas Cuisine or something like that. You make massive tortillas as big as baked potatos split them in the husk like a tater and then pour the roasted corn salsa in.

I spent the day at the UT natatorium watching water polo and now I'm too tired to look it up.
