Potato Leek Casserole

I saw this in the HornFans recipe book, and had the stuff leftover.

Took 8 red potatoes, sliced them thin, took leeks and chopped, added cream, salt and pepper. Put in casserole dish with s&p. Put butter on top and added a bit of veg stock, since I had it leftover. Cooked at 400 for 45 minutes and wallah it was greatness. Thanks to Hornfans recipe book for the idea.

Had it with roasted chicken, and the best part is being able to make chicken soup with the leftover meat and bones.
