I would probably still do what I would have done on the pit. Rup with Stubbs, and brown sugar. I would rub the thing down with liquid smoke first, then let it sit a while then put on the Stubbs, then rub in the brown sugar. I would put some Apple juice in a spray bottle and repeatedly spray the roast.
I think you cook pork at a little higher hear and I would probably go at 325 for 4-5 hours, as a starting point. Then make some coleslaw (marzettis and precut slaw from HEB). Pull the pork apart pile it on a bun that is already suaced and top with the Slaw. Messy but DELICIOUS!
That sounds like what I'll kinda be doing. I have a really good gas grill (once again, apartment, it can't be helped). I think I may cook it on the grill off the heat, and put some wood in a throwaway aluminum pan, to get some smoke on it.

I take this to our poker nights and NEVER have any left over. I just shred the pork after it is cooked and we eat them on flour tortillas.
After the first time I made it, I had to start doubling the amount I cook.
