You and I play about the same it seems. Was out there two weeks ago and played Slick Rock, which would be my recommendation for you. It's the original. Was in fantastic shape after all the rain they've had. The day I was there was the first day in a while that they had been able to mow the rough. Errant shots into the thick bermuda were indeed penalized.
Slick Rock is challenging, but playable for guys like you and me. Apple Rock would be my second choice for you. It is longer, but actually more "playable" because of fairway width, size of greens, etc.
Unless it is the only way you get to play, avoid Ram Rock! I've played it maybe three times, comped each time so that is why, and it eats my lunch. So brutal, it is not fun after about 12 holes. It has been rated as one of the most difficult in the State. They have played the Texas State Amatuer there several times. The Cour-Nasty of Texas, in my book.
Ram is the hardest course I have ever played. If you miss the fairway, it's hill country limestone, cactus, and oak mots, not 6" rough. Plus, long enough to where you have to bring your driver on every hole. Great scenic track...lots of deer. I would play it, just to say you did and count every stroke 'cause it will humble you!
Ram is not overly difficult off the tee. Its' toughness lies in the second shot. It is a second shot golf course. Greens were average size and not overly undulating.
