Pineapple chicken

Found this online, similar to that of Steak and Ale's recipe.

2 cups pineapple juice
1/4 cup soy sauce
2 tablesppon worsterschire sauce
2 tablespoon sugar

Whisk together, marinate chicken breast for 24 hours, grill to perfection. Tried this last night and the chicken was incredible. Just an easy cook for something different.
 
I have... unfortunately. I prefer my hams smoked. Nothing but black smokyness on the outside of them.

Honey cured hams are ok as long as you cut the outside off.
 
Any ideas to replace the soy sauce? My wife has a gluten allergy and can't have the wheat in the soy

Mr. Norris, My wife isn't allergic, but is on a gluten free diet, which is a huge pain in the ***, and does indeed take all of the fun out of cooking.

If soy has gluten, wouldn't the worcestershire sauce also have it?

For the soy, I would just add a little salt. I started adding a lot of ginger to what I make for her. Either fresh ground or a time saver is to get the already ground stuff in the produce section. It comes in little jars and looks sort of like yellow horseradish. Will taste different than soy, but will still go good with the pineapple juice.

If she has gluten allergies, does she eat that Ezekiel bread? I have a great recipe for 'breaded' chicken thighs that you bake that is really, really good.
 
My recipe for pineapple chicken is as follows.
3 - cups Pineapple Juice
1/2 cup - teriyaki sauce
1 tbls soy
2 cloves fresh garlic (crushed)
1 tbls honey
1tsp. cayenne
1 tbls. butter
1 tbls Old Bay Season ( or anything you prefer)

Combine all ingrediants into small sauce pan and bring to boil. Simmer until liquid reduces by at least 1/3. Take 3 or 4 cornish hens split down the middle and put on charcoal grill with a good hardwood thrown on the coals and smoking good. Baste the hens several times as the meat grills, turning as needed. This can be done on a smoker as well. Serve with ice cold Lone Star.
 
pineapple juice is a very good marinade, its good on beef as well...a good portion of my beef fajita marinade uses pineapple juice.
 
There are gluten-free soy sauces. Also, any "Tamari" soy sauce has little or no wheat products. Check the labels.
 
Great recipe. I did this last night and the kids loved it. I also marinated a whole fryer overnight and "beer canned" it in the smoker. Awesome!
