I only have one pickle recipe. I'd be curious to hear others (or different pickling recipes.

love dill pickles, but I also like sweet, hot pickles. This one's a right between a sweet pickle and a dill.

1 jar dill pickles
1 cup cider vinegar
1 cup sugar
1 cinnamon stick
1/2 white onion, large slices

Drain pickles and bring the cider vinegar to a boil. Dissolve the sugar into boiling cider vinegar and pour over pickles. Put cinnamon stick and onion into jar and refrigerate for a couple days.

These things are amazing.
 
In high school, a friend's mom wanted him to go to the store and get some pickle seeds, so she could grow her own.

He explained to her about cucumbers, but she just got mad at him for talking back.
 
I make "refrigerator" pickles all of the time and in fact, have some in there now.

These aren't "real" pickles in that they are in no way suitable for long term storage but will keep a week or two easily.

Thoroughly wash 3 -4 small Cukes and using a fork, score each of the three flat sides but dragging the fork from end to end.

Slice 'em thin and throw 'em in a container that will hold them all and to that add:

1/4 Onion sliced thin
1 Tbs Sea Salt
6 - 10 Whole Peppercorns
2 dried Habanero Peppers, (I grow and dry my own)
2 - 3 Whole or Halved Cloves of Garlic

Fill the container, (I usually use a mason jar), halfway with white or cider vinegar and to the top with water. Cover and shake well and refrigerate for three or four days and then enjoy.

These are pretty hot. You can also use regular dried chilis, (cayennes or Thais for instance). You can add a teaspoon or two of dried dill leaves, etc.

I serve 'em with almost everything.
