Ordinarily I don't care much for sweets, but my wife's pecan pralines are a big exception. These are not the chewy kind.
The closest commercial ones to hers are sold at Mi Tierra's in San Antone.
4 cups brown sugar
1/2 cup cream or Half & Half
2 Tbsps. butter
1 1/2 Tsps. vanilla
Stir over quick medium heat until sugar dissolves in the cream, butter, and flavoring.
Bring this mixture quickly to the boiling point and boil for three minutes without stirring.
Remove the syrup from the stove and stir in carefully 3 or 4 cups of pecan halves.
Drop candy mixture from spoon in 2" or 3" puddles. (found that the easy release foil covering a cookie sheet is the best to drop the candy on).
Let 'em cool completely and store in airtight container with wax paper separating the layers.
