if my stomach can hold an 8-10lb brisket, then, yes, it will.
if you ask around your circle, maybe you can come across someone that owns one of those made-for-home vacuum sealers and buy a roll of the plastic for it? my mother has one that she's packed a bunch of tamales with, and it worked quite well.
The seal a meal won't work very well for a brisket unless it is REALLY dry. It will suck the moisture up and that will make it impossible for the sealer to work. You could instant seal the bag without sucking all the air out.
Since the brisket needs to be cut into two pieces anyway, that would make it a lot easier to fit it in a ziploc. Lots of people wrap them in foil a couple of times then in an old sleeping bag and then stuff it in an ice chest.
If I can't freeze something, I've used the paper towel method also. Like for bags of roasted hatch peppers. It's tricky, but it can be done. I haven't tried wrapping something in Saran first, but that might give you enough time to vacuum and seal before the juices of whatever migrate into the machine.
Freeze it first and then seal it the next day frozen. I've done this for a number of things where I'm concerned about the juice/liquid or losing shape ---brisket, bread, and even soup (sealing frozen soup-cicles or soup cubes).
