Just got a beef tenderloin at Sam's today to cook on Thursday, it's cryovaked... Should I freeze it? Or will it hold for 3 days with no problems? I would hate to ruin such a good (and expensive) portion of meet...

It will be fine for 3 days. Let it come to room temp for a day before you cook it...With a stick stuck up my a$$...

If packaged right it will be fine. If it were me I would wrap it in saran wrap (I prefer press and seal) then place in a zip lock.

That is probably more than necessary but when it comes to a good cut of meat, I'll take better safe than sorry every time.

Enjoy.

FYI: Sam's has some real tasty Prime rib-eye's for a decent price.

I've bought whole tenderloins before and cut steaks to my liking and vacumm packed them all and froze for months at a time ....not only that but everyone else that bought one (long story..I took orders and bought $1000 worth of tenderloins) did the same thing and not one compliant....freezing is fine!

What Wann said.

Actually, I did that just yesterday. I bought one at Costco on Wed and butchered it for lunch yesterday. I got four two-inch thick filet mignons, (which we ate), and three more one and half-inchers, a package of cubes for shishkabobs and a package of trimmings for stir fry. All of which I froze.

Great deal at $10/lb, considering the steaks we had for lunch were worth the total cost.
