Office Pot Luck Help

Need help for a recipe for my office pot luck lunch tommorrow. Has to be something that can make tonight and keep warm in a crock pot during the am.

My office manager assigned me creamed spinach, but not so sure how good that would turn out if it is sitting out and made the night before...

My wife made some cornbread for her office party and it was a good side. Not just plain cornbread -> it had onions, green chiles and creamed corn.
