keep in mind that the WSM will run hot until you get a nice layer of grease on the inside of it. Just be aware and watch the temps and adjust the vents.
After a 2-3 cooks, she'll lock in at 225 and stay there for a good long time.
Count me in as a member of this esteemed club as well. I received a WSM as a wedding gift (which is awesome) but I have not had the time to use it yet b/c of my wedding and honeymoon. I'm going to fire it up on Saturday morning and I can't wait. I finally get to say goodbye to my crappy Brinkmann (although I did a 2nd brisket on it that turned out pretty damn good).
