When a new pizza place opens around here (west Harris co) we generally like to try them out, encourage new business. But why is it that they can never use fresh mushrooms on pizzas? Instead they use the rubbery canned ones. When they stock up for the week they have to get some fresh veggies anyway, like onions and green peppers etc. Why not fresh mushrooms? Around here, Pizza Hut is the only one that uses fresh.

The three I frequent the most (in Austin) all use fresh mushrooms... Pizza Hut, Mr. Gatti's and Mangia's. I'm with you...it doesn't make sense that they would go canned. They either have a food service company deliver or they shop themselves. Both options offer pre-sliced mushrooms. How hard can it be?
