New NYC (Texas) BBQ Joint

$85 for BBQ?!?!?!

I could make a fortune in NYC.
 
They are working heavily with the NYTexas Exes and from what I have seen (no food yet, but lots of info of what they are doing), this is going to be awesome. Can't wait until they open.
 
I've probably been to every so called BBQ joint in this city, and not one has the real stuff you get in Texas. I would welcome the surprise
 
yea should be good, I hear they're going for an "Austin" type atmosphere and looking for people to work who are familiar with their music.
 
"$85 Dollars!" that included beer and music and multiple BBQ vendors, not uncommon for a festival.

I saw photos of the Hill Country Guys at the Salt Lick on another blog, I think they simply got there learn on about CenTex BBQ as it appears they are both local Jewish guys, I mention that the article I read talked about the odd fact that an overwhelming number of the local pitmasters happen to be Jews. go figure it's NYC.

I welcome it as another BBQ joint is always a good thing.
 
Yeah, it's been a nightmare for these guys to get open. They were originally supposed to open a few months ago. Thankfully, they apparently have very deep pockets.
 
so fellow posters next2naus and orange-explosion met up at fette sau (video). the place out in williamsburg that's been open for a couple of months. it's a converted autobody shop, so the old driveway has picnic tables and the garage doors open up into the main restaurant...

a thumbs up. sure, it is expensive, guessing we were there for about 3 hours, and I tend to also smoke my liquid so my bar tab is low, but figure we spent about $40-50 a head. but the vibe is great and it's so damn nice to eat bbq that's trying, outside, and in good company. and as an added plus in the midst of the billyburg hipsters. skinny jeans at a bbq joint is funny, I think. so are green topsiders.

the bbq:
I split mine with a girl. here's what I had:

pork belly - ******* great. like fat wrapped smoked bacon, what's not to like.
a rack of spare ribs- a little dry, but a real nice bark on them.
1lb pulled pork-my favorite. a nice balance of tender and
1lb of brisket- not a big brisket fan or expert, but thought theirs could have used a little more time, was a bit chewy.
potato salad-good, but it was served cold, I like german potato salad warm.

the owner says he's smoking with mostly oak (stacks of it that we leaned against to eat from our makeshift bench/table- the place was packed), some hickory, and maple. but for my fellow new yorker smokers, he did clue me in onto a a source of wood that I'm very excited about... The Link

the weather was delicious last night. which made it easy to hang there. the fact that they also have lots of locals on tap and serve them by the gallon helped. check out the cool pulls:

they also have a very nice selection of bourbon, rye, and american whiskey... I had some thing I can't exactly remember called Eagle Rare I believe that was very light on its feet... l prefer smokier and more bite.

and thanks for the props, nyc matt. the nyc contigent must all meet up soon on my patio and the upcoming festival in madison square.
