I'll say from the get-go that some of y'all might not like me referring to this as chili... if not, call it something else. So, here goes... I just made up this recipe tonight and I have to say it tastes pretty good.
Mediterranean Chili
2 garlic cloves
1 tbsp mixed spices (your choice - I used something spicy)
olive oil
1 tbsp paprika
black pepper (to taste)
3/4 lb ground turkey breast
14.5 oz can of diced tomatoes (w/ peppers, onion and celery)
19 oz can of cannelini beans (drained)
4 oz jar of sliced pimientos (drained)
Sautee the cloves of garlic and the spices in the olive oil. Then, add the ground turkey and sautee for about 10 minutes (be sure to break up the chunks of meat). Add the tomatoes, beans and pimientos and let simmer for 5 minutes. Add the paprika and a few grinds of pepper and let it all simmer for 20 minutes. Of course, it can sit overnight and be reheated so the flavors really kick in.
End result... high in protein, fiber, low in fat and pretty tasty, too.
