Need Salmon Recipe

My grill is down temporarily, and I have some salmon. Anybody got a simple recipe for the oven or frying pan that won't stink up the house?

the "that won't stink up the house" thing is what makes this impossible to do.

No recipe will eliminate the fact that you are cooking salmon in a pan, indoors. of course, if you think it smells bad, i would wonder how you eat it. I blacken salmon inside all the time. the smell fills the house and i love it.
 
steaming over a bed of herbs and lemon slices will not impart any fish odor. takes about 8-10 mins for an average size piece of salmon to be med well, so adjust to your taste.
 
Try this:

Salmon Picatta en Papillote

Take a 12 inch square sheet of cooking parchment paper, (next to the aluminum foil), or (surprise! ...) aluminum foil.

Make a layer of thinly sliced lemon slices to measure approximately the size of your salmon steak or fillet.

Place salmon piece on top of the lemons.

Drizzle about two tsps or 1 tbsp of melted butter on the fish.

Layer some more lemons on top of that.

Toss in a teaspoon of rinsed capers.

A little fresh ground or cracked pepper.

Wrap the paper or foil crimping the edges. Here's the trick, you do NOT want it to be tight. In fact, you want a little tent for the steam to roil around in.

Gently place your fish packet(s) on a cookie sheet and carefully place in a warmed 400' oven. Cook 20 minutes.

Open carefully!

If you crimped the edges well, it shouldn't smell fishy. Just lemony.

You can trade the salmon for any other fish, but adjust cooking time for the size. You can trade lemons and capers for dill and butter, carrots and squash, tomatoes and olives. bell peppers and onions. Whatever.

It's an easy technique with easy cleanup.

Easy enough to cook in the oven. Wrap fish in foil and drizzle olive oil, garlic salt, dill, and lemon pepper over the fillet.

Easy as that.
 
I just bake it with good old Monterrey Chicken seasoning...

Another good one is to marinate in red wine until it comes up to room temp, then put fresh rosemary on it.
 
very easy...
wrap in foil (i put it in a glass cooking dish also) and cook it at 400ish for 25 minutes after salt/pepper/lemon juice. promise no bad fish smell or anything.
 
Rosemary Salmon is good...

*combine olive oil (enough to coat fish) and rosemary (go according to your taste since rosemary is strong)

*season with kosher salt and pepper (optional)

*place fish in hot pan and cook halfway on both sides

*transfer pan in 400-425 degree oven and finish cooking (shouldnt take more than 10mins in the oven)
 
I usually just bake salmon, it's simple and comes out well every time.

I like it with either a

soy / wasabi / honey sauce or raspberry vinaigrette (salad dressing) sauce
 
My favorite recipe is actually on my gas grill. Put a cast iron skilled with a thin layer of olive oil on the middle cooking grate. The grill should be around 425F. Cook the salmon steaks skin side down for 14 minutes. Do not turn or poke.

My wife likes Asian five-spice as seasoning, but you can use anything you like. The skin ends up crisy and the meat is perfect. Make a side sauce of horseradish, wasabi, whatever. Steaks should not be bigger than 8oz. I usually get a nice slab and cut four or five steaks. It creates a lot of smoke and some splattering of oil. The grill works perfect.
