Sept 29th is the opening of the Texas Archery Deer Season. Every year we have a group hunt on the place I hunt. We have gotten into a cooking contest trying to out do each other when it comes to our meals. In the past we have had:
Cedar plank smoked Salmon
1.5" Ribeyes with grilled corn, fried sweet potato chips
Venison medallions in a reduction sauce
Wild game Kabobs
Fajitas with fixings
Dove wrapped in Bacon/Jap/Cheese/Onion in Tiger Sauce
Tarts with cream cheese and a jalapeño jelly
And of course dutch oven cobbler and homemade ice cream.
Here are the cooking conditions. The meal is cooked over an open fire with a grill grate on top. No water, electricity and my cutting board is usually a tailgate. Of course I can prepare and just heat up.
I am looking for ideas to cook this year. I may have access to some fresh elk meat, so that may be the way I go. I am looking for appetizers and main course. I am also thinking of a chicken breast that is stuffed with cheese and jalapeño wrapped in bacon. Maybe some pulled pork sandwhiches. Any ideas?
