I did 2 stuffings for thanksgiving that were delicious and relatively easy to cook.
Sausage/Sage/Roasted Garlic stuffing & Apple/Cranberry Stuffing. Both had the same basic ingredients and then the difference was meat or fruit.
Basic ingredients:
Loaves of Italian, Sourdough, and Wheat bread - cubed and then lightly toasted in the oven
Fresh Sage, Rosemary, Thyme, Italian Parsley chopped
Diced Onion, Celery, Carrot - about 1 cup each for each dish
Chicken Stock - 1-2 cups,
Salt, Pepper to taste
1/2 stick of butter - to saute vegetables and herbs in
For apple/cranberry stuffing I used granny smith apples and dried cranberries (rehydrated in boiling water.) After chopping the apples I added them to the butter, vegetables, and herbs. Once softened, I poured them over the bread cubes, added some chicken stock for moisture and then baked for 20-30 mins.
For the sausage/sage/roasted garlic stuffing -- I roasted a bulb of garlic with olive oil, salt, and pepper. I cooked 32ozs of reduced fat Jimmy Dean sausage and added some dried sage while it browned. I then removed the sausage and added chicken stock, roasted garlic cloves, and herbs. I also sauted (sp?) just the veggies butter. I then combined all ingredients in a bowl, stirred lightly, and then baked for 20-30 minutes.
The sausage/sage/garlic stuffing was the bomb. Very tasty if you like sausage.
