I cooked a bad *** pizza tonight, consequently my kitchen is wrecked. It was awesome. File it under the title "meat pie". Here's the recipe...
2 tbsp. onion, chopped
1 clove garlic, minced
1 tbsp. olive oil
1 lb. ground beef, extra lean
2 tbsp. red wine, dry
*1/3 cup sun-dried tomatoes, slivered
7 black, pitted olives, coarsely chopped
2 tbsp. grated Parmesan cheese
1/4 tsp. basil leaves, dried
1/4 tsp. rosemary leaves, dried
1/4 tsp. oregano leaves, dried
salt and pepper to taste
12" Pizza Crust
1 cup Fontina cheese, shredded
Sauté onions and garlic in oil until onions are translucent. Add beef and wine. Sauté until beef loses pink color; drain fat. Remove from heat and add sun-dried tomatoes, olives, Parmesan cheese and herbs. Salt and pepper to taste. Fill pizza crust shell leaving a 1" border. Sprinkle with Fontina cheese. Bake 8 - 10 minutes on a baking sheet in lower 1/3 of oven. Cool slightly and serve.
*I substituted jalapeños for the sun-dried tomatoes.
For the wine I used a cheapo Marqués de Cáceres Crianza... 2003 Rioja... and obviouslt drank the rest of the bottle since the recipe only calls for 2 tablespoons of wine.
