Monitoring smoker temp w/digital probe thermometer

What's the correct procedure for monitoring your smoker temp with a digital probe thermometer, i.e. where does the probe go, does it need to be wrapped in foil, etc.? Thanks.
 
I put mine through a potato on the top rack next to the meat. I used to just put it through a big piece of potato but it took up more room than I liked, now I have it down a bit better.

I do exactly what Dlatin does. I've also read where you can use a wine cork if you don't have a potato. You can also just stick it up through one corner of whatever meat you are smoking.
