Mistake/Hodge Podge meals

These are sometimes amazingly delicious. Tossing things together you like can pay off sometimes.

Tonight I cooked some venison sausage I had thawed and did not want to just eat it as is this time. I steamed some brown rice and organic edamame. Tossed in some field peas and juice.

Seasoned with Garlic, Rosemary and a good amount of New Mexico red chile for zing. It is simmering now but the taste was outstanding. Perfect zip to the tongue.

It is not a pretty dish by any measure but it is taaaasty.

What are your mistake meals?

I had some leftover sausage and chicken last weekend. Cooked up some brown rice and swiss chard, and mixed lunches for the week. It worked out pretty well.

btw, did you read Kelso's column about "edamame sized hail"?

ground beef, rice, cream cheese, and frozen peas...season with salt, pepper, garlic and anything else. If it is passover add some matzah that you soak in water (matzah brie style) and cook in a frying pan.

just to add, take out the cream cheese and its pretty close to home made dog food.

Last night I simmered some leftover smoked pork loin in a bock and brown sugare marinade and mixed it with rice. Figured I'd have plenty left for lunches and what not, but the family demolished it and left about 1-1 1/2 servings for me.

Any leftover meats seem easily mixed with rice to make a filling meal.

Oh, and for quick and easy, nothing beats 1 lb. browned ground beef, 1 can ranch style beans, 1 can corn, and one medium jar of medium Pace picante.

That stuff is ALLSOME!

I'm in the process of cobbling some dinner together simply on a "what can I make with stuff I have on hand and not have to go to the store" basis.

It's smelling really good. I've been taking pics, hopefully it turns out as good as it smells.

This is similar to one mentioned above but.

1 lb ground beef seasoned with cumin, garlic salt, and chili powder.

1 can refried beans

1 can ROTEL

Cheese

I swear there is very little better.

A stove top version of the famous boy Scout Hobo dinner;
brown ground beef
Put in tons of Worchesthire sauce
add thinly sliced potatoes
add Chopped onions
add Carrotts
add Mushrooms
Add more worchesthire sauce

i even sometimes do the traditional hobo dinner and broil it in foil in the oven

i think cad's blue cheese jalapeno burgers take the cake here.

my grandma makes cottage cheese dip with mayo, a bit of mustard, and crack black pepper that is delicious with ruffles. she told me she grabbed the stuff out of the fridge years ago when a surprise guest showed up.

When I was 8 or 9, my dad, who was never a baker or dessert guy, decided he wanted to make chocolate mousse.

He dove headlong into the project before realizing that we didn't have all the necessary ingredients on hand. So, he improvised, adapted, and overcame. He analyzed various things to see if they had the right chemical and physical properties, calculated amounts and porportions, and kept on truckin'.

The resulting mousse was unfreakingbelievable. Outstanding doesn't do it justice.

As we ate it that night, we raved, and told him that he had hit a homerun -- "how did you do it?"

He stared glumly at his empty bowl -- "I have no idea. I'll never be able to do it again." And he never did.
