Meatball Recipe

Anyone have a good meatball recipe?

I'm either going to use them for spaghetti or maybe a baked ziti with mini meatballs.

I could always use a good new spaghetti sauce recipe too!

1 lb ground beef
2 to 3 italian sausage links, casings removed
1/4 c finely chopped onion
1 cup breadcrumbs (from white bread, as opposed store bought)
2 cloves garlic, finely chopped
little less than 1/4 cup milk
1 to 2 eggs
chopped fresh flat parsley
1 Tbs dried herbs, whatever kind you like
salt, pepper

preheat over to 350

1. Soak the breadcrumbs in milk for a few minutes.
2. Add rest of the ingredients.
3. Mix well with wet hands
4. Form into balls and place on baking sheet
5. Bake ~30 minutes, depending on size of your meatballs.

Makes a bunch, so you can have a meatball sub the next day.
 
ground veal is essential in most authentic bolognese sauces and/or meatballs.

not sure how "tasteable" the addition is.
 
My recipe is similar to Smoky's.

I use a combination of ground beef, pork, and veal, using a little more of the veal than the other two. I also saute the onion and garlic before adding it to the mixture. Definitely add the handful of grated parmesan.
 
I didn't end of making them tonight, ran out of time and ended up making huevos rancheros with the works.

But I will keep the additions in mind. The last time I made meatballs I added freshly grated parmesan, which really added to the flavor.

Thank you all again for the help.

I just got home from make some pretty good meatballs with my meal. I took a bit of everything from everyone and just started mixing. This is what I included:

ground beef
ground veal
ground pork
minced onion
minced garlic
bread crumbs
egg
parmesan and romano cheeses
spices

To me, the cheeses really added something to it. I used freshly grated romano and parmesan cheeses. I also sauteed the onions and garlic in olive olive oil before adding to the mixture.

I made small meatballs and then lightly coated them in bread crumbs and stuck them into the oven.

They were very good so I will make these again.

Garlic Meatballs

Very simple and delicious.

Use very lean ground beef.

Finely chop some onion and shallots.
Mix into meat with salt and pepper.
I usually also add some lemon pepper as well.

Roll into meatballs about 1-1/2" in diameter.
Then roll meatballs in seasoned flour.

Peel some garlic cloves.
Slice the cloves into 2 or 3 pieces each lengthwise (depending on how thick they are)
Stuff each meatball with a slice garlic clove right in the center.
Close meat over hole.

Fry in about 3 TBSP olive oil in a skillet on all sides until done. Remove meatballs to a plate.
Retain the juices in the pan.
Add some of the seasoned flour to make a roux. (you may have to add a little more oil too)
Cook for a few minutes and then add a can of beef broth.
Turn up the heat stirring constantly until it thickens.
Return meatballs to pan and stir until heated.
Remove from heat.
Sprinkle with some chopped parsley.

Serve them on top of or along with some good mashed potatoes.
You can also serve them on top of rice.

Not Italian at all but really tasty.
