Try Longhorn Meat Market. It is one mile east of I-35 on MLK. It is across the street from the house w/ the Statue of Liberty and stuff in the front yard. Great meats prices. I recommend them highly and they will work with you and answer questions. Btw, they have a great price on chicken breasts which are alread fresh frozen for you. Get the mixed size bag and not the ones that are all the same weight for restaurants.
Thaw em out a bit, refreeze in portions you like. Enjoy.

Whole Tenderlions in the $9.95 range are a somking deal.
I ahve a buddy who swears by a meat market over on Peyton Gin that sells grass fed Plugerville beef, but I don't know aobut it personally.
I actually Like randall's meat market but I only tend to buy the stuff that's on sale with my "randall's Card discount" otherwise Randall's is pricey as hell!
HEB meats generally are not that great aznd their butchers seem to be the least experienced, Albertson's has a much better meat market.
One thing that isn't well known about COSTCO is that they will cut almost anything to order if they have it in stock. For the same prices as the regular cuts.
hmmmm..... I might try smoking a Rib Eye Roast this weekend....
I guess I should have been more specific. I am looking at splitting a side of beef with a buddy of mine. I don't think a grocery stor meat department will do that. I am deciding whether to buy a half cow from a farmer in San Saba and having it processed or just purchase the side alread processed from a meat market.
Can't answer your more specific question, but I did have to give some love to Johnny G's. Used to buy meat there when I still lived in Austin. Good stuff...
