Mawmaw's catfish Courtbouillon

yummmm.... saw catfish was on sale today at HEB so what do i do? I grab my phone and call my Mawmaw for her Courtbouillon ( i think this is how it is spelled... i have never seen it written before so i had to google it)
(koo * be *oon) recipe... im so excited, courtbouillon is one of my favorite meals.

edit: oh its real authentic Cajun food if you did not know.. we do eat stuff besides gumbo, crawfish, and boudin..

Sounds good. I'm interested in seeing it.

Also post your mawmaw's gumbo recipe. My grandma made the best gumbo on the planet, but she died without ever sharing the exact recipe with anyone.

Someone told me it is the cajun word for Crappy-- as in the fish

I don't eat much catfish anymore-- thet farm raised stuff has a funny smell to me-- Tilapia on the other hand reminds me of crappie--clean tasting
 
Tilapia is not a fish...Sac Au Lait is a fish.
People who eat Tilapia have never even owned a "Snoopy Rod" before. Catch a wild, fresh Flounder or Crappie then you know a good eating fish. Tilapia is for rookies....
 
heh she went do my uncles new ranch and forgot to give me her cell phone number i just found out. so hopefully i get it today

ok so my mawmaw and pawpaw are safe

apparently they thought i had their cellphone, but any how here is the recipe:

this is four 2 lbs of catfish (Feeds about 4 people a few times)

2 lbs of fish (red snapper is also real good)

1/2 stick of butter

bell pepper

garlic

onion

small can of tomato sauce (about 18 oz)

small can of chicken broth

and rice

various seasoning

so here it is:

melt your 1/2 stick of butter in your pot

cut up 1/2 an onion and about three tablespoons worth of the bell pepper.

sauté it up in the pot with the butter for about two minutes.

add tomato sauce and chicken broth

stir and season to taste.

turn med/low & cover for about one hour.

cut fish into smaller pieces and season the fish.

bring pot to low low boil and add fish

cook for 15-20mins or until fish is done (like most fish cooking, you can tell it is done by picking it up with a fork and seeing how it separates)

edit: **** forgot to tell you all to steam up some rice and use it as a rice plate
