Lentil Soup

I just cooked up the wife and myself some nice lentil soup. I basically used the repice on the back of the HEB lentil package, but with about 2 times the bacon and garlic. I also threw in celery and cumin... turned out WOW.
 
thats about what i do minus the cumin, and i add more carrot cubes too. i will have to try the cumin addition sometime. sometimes the easiest recipes are the best

i got my wife to try it the first time i made it, back when we were dating. she was trying to be adventerous and impress me by giving it a shot

she took one look at the bowl i put in front of her and said "that looks like prison food." i had to laugh

Gak, the first time I had lentil soup it had cumin in it. I was in elementary school and I can still pick out that spice on my pallate. I love cumin. I actually can't image having lentil soup without cumin. I don't put in a ton because cumin is so strong, but it does balance it out. I don't like too much sweetness and I was glad that the carrots, along with 1015 onion I used didn't make it too sweet.
 
1 cup lentils
7 cups water
2 tsp salt
2 tsp coriander
2 medium onions, chopped
1/4 cup olive oil
1/8 cup lemon juice
1 pkg frozen chopped spinach, thawed and drained
1 cup uncooked macaroni

Wash lentils. Place lentils, water, spices in large pot. Boil, then simmer for 40 minutes. While simmering lentil, saute onions in oil. Add onions, spinach, lemon and macaroni to lentils. Simmer till macaroni is cooked.

An alternative to macaroni is to make burghul balls:
1/2 cup burgul
1/2 cup flour
2Tbsp water
1/4 tsp salt

combine and mix all ingredients. Add water if too dry. Shape into dime sized balls and drop into soup after it has simmered for 30 minutes. Cook in soup for 25 minutes.




I don't really like the burgul, but its there fwiw. We usually add more lemon to taste as well.
 
"Good Eats" had a segment on Lentils. Alton made cookies with Lentils as a major ingredient.
