Saw this thing on Throwdown with BF. One thing I don't understand is how you get heat to the meat without ashes getting all over the food in the box.

Anyone ever use one? If nothing else they look kind of cool.

It's like a pork ice cream cart.
 
the way it appeared to me was similar to cooking a pork in a luau (sp?). basically, it looked like there weren't any holes/perforations on the piece of metal the coals were resting on. i think the heat generated from the coals goes below, into the cooking chamber and essentially makes that thing act like an oven. one thing i didn't understand was if there was any smoke/char flavor to the meat at all. anyway, the true puerto rican guy's pork looked delicious.

as an aside, catalan in houston on washington ave has one of those and i think on sundays prepares some food in that fashion.
 
We're trying that guy's recipe this weekend, and I'm guessing we'll try to cook it in the smoker since we'll outside working in the yard anyhow. Getting that pork shoulder bone out took some work. But even after a couple hours of marinating the fridge smells pretty good. Only thing we're lacking is guava shells.
 
I have a buddy that has one of those things and he does whole pigs and it is awesome. It's the best pulled pork you have ever had.
