My grandmother told me that when my dad was little, he wouldn't eat yellow squash. She always cut it to make round circles, battered it in cornmeal and fried it. He wouldn't eat it. So she started cutting it length wise, still battered in cornmeal and frying it. Just told him it was catfish. The ******* at it up.
I sometimes steam baby carrots, then add honey to them.
twice baked potatoes or put out a baked potato bar so they can fix it themselves

Polenta
minced celery added to macaroni and cheese
couscous and cranberries with pineapple (this one is really really good. Schwans sells a variation of this if you don't want to do all that prep work)
simple cold pasta salads (used to make one with tri colored pasta, bottle of Newmans own italian, and sometimes cubed cheddar and black olives-we liked it)
