This is one of my favorite meals during the week...easy to make, and freaking tasty.
Jamaica Jerk Chicken Breast with grilled portobello.
I started the shrooms first...add fresh garlic and butter.
Trim and flatten the breasts.
Add Walkerswood Jamaica jerk seasoning. It's hot. I add a lot. It's how I roll.
When flattened properly, they cook fast on a hot grill.
Ingredients: pepperjack cheese, fresh tomato, leaf lettuce, avocado, a couple slices of grilled portobello. I use the Orowheat buns, toast them first, then slather on some mayo and some aioli garlic mustard sauce from Trader Joe's.
Voila.
Serve a with a nice riesling to put the fire out. I like the Bonny Doon Pacific Rim dry riesling.
