Jalapenos and Poblano Peppers

Any advice on how to clean and seed peppers without coughing and choking? I like to make shrimp stuffed jalapenos and roast poblanos for stews, but it is nearly painful to seed and clean them.

I actually use disposable gloves when I clean japs. Also, someone gave me that jap cleaner (plastic handle, metal triangle thingee you swirl around inside, cleaing out all the seeds and stuff) and it works really well.

The gloves just protect me from myself (touching my eyes or anything for that matter later) and that little dohickey makes it a cinch, takes no time at all.

Otherwise, all I can tell you is open a window or that you're a wuss.
 
the smell never bothers me, wearing gloves is a good idea but i dont...i forget i have chopped the japs until a couple hours later after ive washed my hands a few times and i rub my eye and all hell breaks loose.
 
I wish all hell breaking lose on my eye was the worst story I had to t- NO SEX AT ALL!!

Seriously, I ain't joking. That's why I'm religious with the gloves.

You know how to make rellenos? NM style? I love those skinny rellenos.
 
If you are cleaning fresh chile you really don't have to worry about aroma. Its when you roast or boil them that will take your head off. To make my fresh jalapena salsa, I boil 7 or 8 whole chiles along with 2 or 3 cloves of garlic. When they get soft, take a fork and knife and slit sown the middle to remove seeds and veins. Put in food processor and blend until smooth. This simple sauce is great on sandwiches, hamburgers, beans, you name it. Put into squirt bottle and keep in fridge.
