Italian Sub?

I really want one and was wondering what all you put on your italian subs...

Do you put oil and vinegar on it? if so, what kind of vinegar? What about spices - garlic, oregano, basil? And the meats and cheeses?

For anyone from Arlington/Metroplex, I used to go to Dino's subs off of Collins when I was a kid. I can't for the life of me remember what all they put on their subs that made them taste so great.

I guess i'm just looking for inspiration, or else I'm gonna have to grab something from Subway.
 
Salami, mortadella, provolone on a chunk of French bread with finely shredded letteuce, thin sliced tomato and onions. Dressed with vinegar and olive oil, sprinkled with Italian herbs, (basically oregano, basil, rosemary and parsley), salt and pepper.

Served cold, (or room...whatever).

It's 7 am and I'm wanting an Italian sub.

A few months ago I went on an italian sandwich bender. My mission was to find the best one in Austin.

Hog Island Deli on Lavaca won. Check them out for a good italian sandwich.
 
Red wine vinegar is probably traditional, but Balsamic is good and I've used rice wine vinegar in a pinch. And use good quality olive oil.

Cut the sammich in half and try each vinegar on one side.

Experiment. Enjoy.

Oh, yeah. This is very important. You MUST eat this sandwich with pepperocini and your choice of olives, pickles, etc. (See my recipe for fridge pickles on the Pickles thread for instance.) But the pepperocini is mandatory.

My dad made a sandwich from his childhood that was called a "ginny grinder". (Yes I know that is considered an Italian slur). So - it was the above listed italian type meats, provolone and sliced green peppers and onions that had been sauted in olive oil with a little oregeno. ummmmmm
