Ideas for BBQ cookoff

I am part of a competition BBQ Cookoff team and we will be out at the Star of TX Rodeo and Cookoff in March and I am wondering if anyone might have some ideas for the Jackpot competition. You can make any meat dish you want (seafood, beef, pork, chicken) and enter it. Any good ideas out there???
 
I've seen various types of oysters win a Jackpot competition in a chili cookoff, and have also seen somebody win a Jackpot with some homemade wine.
 
Mac, what's the team name? Me & the wife are on the Arena committee for the STFR (wife has been @ it for about 10 years, I'm into my 5th). Let me know where you're located & I'll be sure to stop by & drop some coin in your jar.

As for suggestions on what to make, I'm completely @ a loss... unless they happen to have any kind of veg category, in which case I have a killer recipe for stuffed bell peppers (no meat, which is a travesty unless you realize it's a side dish).

Dont know if you can do appetizers or not:

ABT or Atomic Buffalo Turds...ABTs

or

Smoke a head of cabbage:

Core it out, shove a few chopped cloves of garlic, along with a stick of butter and table spoon of sea salt down where the core was. Wrap some foil around it and smoke for about 2hrs.
 
I'm not sure what we're entering either. If anyone is interested in having a place to go, we're selling some tickets to our booth for pretty cheap, just PM me. I love the cook-off!

Cowboy breakfast is almost here... this will be the 2nd year I've taken Tex & this year she'll be a bit more into it. I can't wait for pics of her & Elsie @ the breakfast.

Mac, I looked for you @ the Q yesterday - was @ BBB from around 4p - 6p. Unfortunately, I don't know your "street" name. I asked for a "Mac" & told about 4 different people that I knew you via that name through HF's.

Mac you and I probably met sometime over the weekend. You were in the booth right next to us (BMF Cooks). I was the guy in the shirt with the name tag that said "Meat."
