f my inlaws and their stubborn ****.

my house, my food.

anyway, I know i will do gumbo, specifically tyler florence's seafood gumbo. I have done it before and it is outstanding.

etoufee? jambalaya? I feel like I need to do something that is more of an entree than those.

I will need to feed 8 total. ooh! i should do a bread pudding!

more suggestions please.
 
Crawfish Pie

cornbread dressing (not cajun, but goes well with the dishes)

Dirty rice (a MUST have for any cajun feast)

Boudin

where do you live? can you get fresh seafood? shrimp? crabs?
 
Just an FYI Scott, Chicken andouille gumbo, aka Gumbo Ya Ya, is a traditional offering, especially in the little communities along the river road stretch from Laplace to Baton Rouge.

I spent 3 glorious Christmas Eves at an x-girlfriends parent's house, right on the river road in Gramercy LA, stuffing on Ya Ya and enjoying the incredibly moving spectacle of the bonfires burning for miles along the levee.

At the 1:08 mark in this video, you see what looks like a Coke truck. It's not. It's a bonfire directly across from the Gramercy Fire dept.

At the 1:13 mark, you see a blue pickup on the left. That's my GF parent's house.
 
Prudhomme's first cookbook has several fabulous recipes including Seafood and Sausage Gumbo, Shrimp Etouffe, Cajun Meatloaf, and "Barbecued" Shrimp (it ain't BBQ, but it is very good).
 
poke, my wife's dad is from vacherie on the other side of the river. Those bonfires are indeed amazing.

They know how to build a bonfire there.

Back on topic, how about an andouille-stuffed pork tenderloin?
 
i do not want to do any large bird. did my first turkey for t-day this year. turned out great, but not wanting to do all of that again.

I may do blackened redfish over crawfish etoufee, along with the boudin stuffed pork loin for main dishes.
 
I used to live next door to some cajuns. She could make a dressing that had shrimp and pineapple in it. Holy moly was it great. I'm pissed that I never got the recipe before they moved away.

Scottsins, don't get your crab at Central Market. Look for the HEB Plus stores, they are carrying the same damn crab for 14 bucks a pound rather than $18-20.

the good thing about all of this is that i can make the dirty rice ahead of time, along with the etoufee and gumbo (except putting the seafood in).

does anyone know how to make biscuits like popeye's does. that would kick *** with the cajun stuff.

also, any tips on the loin? I will grill and not smoke (should still be okay?).
