when impressing is on the line, what do you do for desserts? i would love some suggestions, preferably involving copious amounts of chocolate. when i get the secret ingredients, i'll post my mom's recipe for homemade thin mints. they're like crack, and so good that the girl scout variety taste like poop in comparison.

1. Go to Central Market or Whole Foods.

2. Get a slice of "Miles of Chocolate" -- a tort/brownie kinda thing that is freaking AMAZING.

3. Get some lovin' from the wife.

I can't bake for ****. But I like some lovin' from the wife.

Might make some vanilla pudding and put if over berries. Might make a choclate pie. Depends on the company and the main course.

Chocolate crème brûlée or chocolate sheet cake wtih truffle icing.

Mr. 1990 makes the best tiramisu in the world, the secret of which is tripling the amount of chocolate that the recipe calls for. This would cover many impression points for you:

1) It's a "restaurant" dessert
2) It is foreign in origin with a "fancy" sounding name
3) You get chocolate AND alcohol

However, it is a bit time-consuming and labor-intensive. So I guess it depends on how much you want to impress.

I second (or third) creme brulee. As a man, it is especially good because to make it properly you have to use a torch.

Try this simple but effective treat......

Two packages of the cheap brownie mix (that come in pouches).
Some Symphony Toffee bars. (not sure how many but enough to cover the pan you use)

Mix one pouch of brownie mix and pour into baking dish.
Next put a complete layer of whole Symphony Toffee bars in to cover batter.
Mix next pouch and pour over the top.
Bake.

Serve hot with your favorite ice cream.
I used Ben and Jerry's Vanilla/Caramel/Fudge

Drizzle with caramel sauce.

Fabulous and cheap and easy as well.

I haven't ever used the plumber's torch on creme brulee, but I love the little micro torch. One of these days I'm going to use it to really burn something up.

I make Tiramisu or a variation of it called Taramisu cake. I have brought both to pot lucks and got the platter back licked clean.

Both are pretty long recipes so if you want it, just leave a message and I will go dig them out.

Mayberry, we have a recipe thread up near the top of the main Rusty's forum page... if it's as good as advertised, you can be included on this thread.

Chocolate Tiramisu Cake

3Tbs+1 tsp instant esspresso coffee powder, divided
1 pkg. (18.25 oz) Devil's Food Cake Mix
3 Eggs
2/3 Cup Sour Cream

3 Cups Heavy Cream (divided)
1/2 Cup Sugar, Divided
3 Tbs. Sweet Marsala Wine
8 oz. Mascarpone Cheese

Read all directions first.

Preheat Oven to 350º
Coat 2 round cake pans with cooking spray (8 inch pans)

In mixing bowl, stir 2 Tbs. espresso powder with 1 cup water til dissolved
At low speed, beat in cake mix, eggs, and sour cream until combined.
Increase mixer speed to medium, beat 2 minutes
Divide batter between pans and bake 30 minutes or until the toothpick comes out clean.

Microwave 1/4 heavy cream in microwave on high for 10 seconds. Stir in 1 Tbs. espresso powder until dissolved.
Transfer to bowl and add 1/4 Cup sugar and remaining heavy cream.

At med. high speed beat mixture until stiff peaks form, reserve one cup. Refrigerate remaining whipped mixture.

In another bowl, stir Marsala wine and 1tsp espresso powder until dissolved. Stir in remaining sugar and mascarpone cheese. Fold in reserved whipped mixture (the one cup of whipped stuff).

Place 1 cake layer on assembly plate, cake platter, etc...

Spread with mascarpone mixture. Top with remaining cake layer. Spread cake with whipped cream.

You can garnish this with chocolate covered espresso beans or shaved chocolate. Or whatever you want.

Put in fridge til ready to serve.

Sometimes I omit some of the espresso as it can be too strong of a coffee taste for me.

If you haven't imbibed the rest of the bottle of Marsala...you can serve it with the cake..no sense in letting it go to waste...
