I took up smoking (And you can too!)

I drifted onto this board in 2006. Back then, I lived in a condo. I felt that I was living a fulfilled life- I had just married the girl of my dreams, I had a job I loved, and Texas had won a national title in football. But perusing the newly minted Rusty's grill, I knew my life was missing something.

I read Hornian's 3-2-1 rib method. Repeatedly. I didn't have the room to keep a smoker, but I made a solemn vow that I would own a smoker when we bought a house. And that I would make ribs...and brisket...and sausage...and chicken...and turkey...and fish...and whatever else could be improved by adding smoke!

So our big day came last summer- we bought a house in August and moved in. I was fortunate that around the same time one of my closest friend's parents moved to Vermont and I got to inherit the old smoker. I hauled it into the backyard and made ribs for the first time on the day of the Kansas game. Since then my smoker has been used at least once a month, with great results.

So I present my illustrated Easter meat. This was the first family holiday that my wife and I hosted in our home and the food was a big success.

And a big thank you to all who contribute to this board- I spent hours reading many great recipes and I've been overjoyed to be able to put them into action.

Now that's my kind of smoking!

So how did everything turn out? Did you smoke your brisket fat side up? If not, don't let Brisketexan see that. Looks fantastic cut up though.

And those ribs at the end are beautiful. Making me hungry.
 
Brisket was done fat-side up. I saw the debate when I was preparing my first brisket (Superbowl) and decided that after the rib advice I'd seen before, I'd be foolish to ignore the other information present on Hornfans.

Cow ribs are on the list of items to be smoked. I try to keep it to once a month or so, both to minimize the impact on my grocery budget and also because I need to spend more time getting the yard together. It will probably increase by next football season though!
 
Yes this board is addicting...just like smoking is. I can't imagine not having a smoker in my backyard now. Many many parties with excellent results. Thanks Hornfans!!

I smile everytime I see the title of this thread. And then I have to click on it. Then, just like I just did, I have to slurp in the saliva that floods my mouth so I don't dribble on my keyboard.

I ask all smokers to continue to post through the "summer" (my winter). It kills me but it gives me hope.

We did- wife really wanted to use them. This was our first big family event that we've hosted since we got married, and it was the first time we ever got to break it out.

When I did my first brisket for the Superbowl, we used paper plates

Getting married next month. Don't think my brisket and ribs will come into contact with the Waterford plates. Hell, I don't even use a plate, or a fork for that matter.

Congratulations on getting married- be aware that you make little sacrifices to get the things you want. I was happy to allow my BBQ to be served on fine china at Easter so that I could drop the money on buying the 20 pounds of meat I ended up cooking!
