I'm going to a baconfest event this weekend. All of the food features bacon in some way.

I wanted to go over the top this year, so I'm doing the unhealthiest thing I've ever heard of. It's called bacon explosion. I'm taking a pound of Italian sausage, topping it with crispy bacon bits, adding barbeque sauce and some spices. Then I roll the sucker up and wrap it in a latticework of bacon and smoke it for 3 hours.

The website that gave me the recipe says it's over 5000 calories. I'm inclined to believe it.
 
I think someone posted a thread with pictures on that a while back, except the ingredients might have been slightly different (I don't recall Italian sausage in that version).

Let me know how it turns out. I'll enjoy it vicariously.
 
Here's a version we did a few days ago.

1 Lb log Jimmy Dean Hot Pork Sausage.
Pepper Jack and Sharp Cheddar blend.
Thick-cut, Maple Bacon.

About 4 hours on the off-set smoker @ 200, using a combo of mesquite, pecan and apple wood.

Brickbats to any and all using maple bacon. That stuff is fit for a Yankee, perhaps, or for children--at breakfast! ... but any self-respecting Texan should know better.

I was born and raised in Texas. I have spent fewer than 2 years total outside of Texas in my entire 50 years on the planet. Sweet bacon is not a Texas thing., just in case someone wanted an 'expert" opinion.

So how did it taste? Was the end result worth the time, materials, and effort? Will you be cooking the Bacon Explosion again? And are there any "cross section" photos?
 
I do a variation I call a pork bomb. Bacon mat on the outside, a layer of pork sausage, a layer of ground pork and a tube of chorizo in the middle. It is amazing and looks great on a plate.
 
DallasC, I applaud you for knowing what you like and I salute your 4 generations in Texas. My family is working on the 6th generation, of which I would be part of the 5th, owning the same 480 acres in Texas and on that piece of land, Maple does not grow. Still, having a sweet tooth is not foreign to Texans so, I get it. Import the Maple bacon and wrap that stuff up.
