A two pound beef tenderloin. It'll be me and my fiance for our first Christmas with just us. We both have to work around the holidays. Thinking of maybe roasting it. Any ideas for good rubs out there or how to prepare it. Thanks and merry Christmas.

Think "mustard". Tenderloin and mustard just go together.

Mix up some whole grain mustard, some savory, and some thyme, and add olive oil until it's a smooth paste. Lightly spread it on your tenderloin after searing it in a skillet on the stove for a couple of minutes on each of its 3-4 "sides". Put it in the oven at 450 F until the center of the thickest section measures 130 F (medium rare), which will probably take about 20 minutes or so. Man, it's great meat. Don't do much too it. I do a tenderloin the Ina Garten way: massage butter all over it, lots of salt and pepper and then into a clean 500 degree oven until the inside hits 125. Simple and perfect every time.
