Hummus recipe

Made some hummus the other night that turned out relatively well... I'm trying to find a better recipe but I started with this (made some edits based on how I made it so, yes, it's not a purist's hummus but still good)

Prep Time: 10 minutes
Ingredients:

* 1 16 oz can of chickpeas
* juice of one large lemon
* 1 1/2 tablespoons tahini
* 2 cloves garlic, crushed
* 1/2 teaspoon salt
* 2 tablespoons olive oil
* roasted red pepper, to taste (optional)

Preparation:
Drain chickpeas and rinse. Combine ingredients in blender or food processor. Blend for 3-5 minutes on low until thoroughly mixed and smooth.

Place in serving bowl, and create a shallow well in the center of the hummus. Add a small amount (1-2 tablespoons) of olive oil in the well. Sprinkle paprika on top and serve with pita.
 
That's pretty funny because I also made hummus for the first time just the other night.

I used a recipe from an ex-girlfriend who makes the best hummus I've ever tasted. It didn't come out as good as hers, but it wasn't too bad.

The recipe is almost identical to yours, except no salt (and I'm wondering if she just forgot to tell me that) and no optional roasted red pepper.

She's an outstanding cook but does just about everything "to taste", so the measurements she gave me may have been a little off or something. I need to check with her on that.

Also, I didn't rinse the chickpeas, but I'm not sure how much difference that makes.
 
Well, the red pepper thing was my idea. As for rinsing, I do this with any canned beans as it gets some of the solution off and lowers the sodium content. I probably put a little bit less salt than the recipe as I just put a couple of grinds of sea salt. I'm thinking that next time, I may need to add a bit more tahini.
 
My black bean hummus recipe.

1 can black beans, drained (15 oz)
1/4 cup tahini
1 tablespoon garlic, minced
1 tablespoon olive oil
1/4 tablespoon lime juice
1/2 jigger good tequila, optional
1/2 teaspoon cumin
1/2 teaspoon Tabasco
about 1 T cilantro, minced and sprinkled on top at service.
 
DC, that sounds GREAT! I love hummus, and have never thought of making it w/ black beans. I like the idea of the lime and tequila, too. I'm going to give that a try this weekend.

It's not really hummus if you don't use chickpeas. I put a little cumin in my hummus, and I never put tahini, because I never have tahini.
 
1 can of chick peas, olive oil, juice from 1-2 lemons (I prefer 2, if you use 1, the taste has a more smoky quality), ground pepper, cilantro, 1 clove garlic, dill to taste. I really love to throw some sliced cherry tomatoes, chopped onion and kalamata olives on top.
 
I opted for the juice of only one tomato and my wife made the comment about the smoky flavor the other night. It came out nicely though. Again, I would use more tahini. Just look for it in the ethnic foods aisle in your grocery store. I bought a big jar of tahini for less than $4.00 at my local Kroger store.
 
not enough olive oil or tahini in these recipes. For whatever reason I think hummus scales best when you use 2 cans of chickpeas/garbanzos, so...In food processor:
- 2 cloves garlic
- add chickpeas with 1-2 TBSP's of the juice
- Liberally add kosher salt, cumin and (if desired) cayenne or other spice/flavoring agent (ancho chile powder actually works real well)
- add 1/4 cup tahini paste and process 10-15 seconds
- Add juice of 1-2 lemons
- slowly drizzle 1/2 cup olive oil while processor is running

Tahini thickness can vary, so adjust olive oil accordingly,
